Larry Smith of Aire Rite in Southern California submitted this picture of a kitchen exhaust fan that was just cleaned the day before! Isn’t it amazing how dirty it became overnight? Notice the ten gallons of grease in the bucket on the left that the fan extracted from the grille effluents in such an amazingly short period of time.
Larry is an ace kitchen exhaust balancer and requires the systems he tests to be cleaned before balancing. He advised the restaurant manager to get his money back from the exhaust fan cleaning company.
